Cuisine rooted in the land
At the Hôtel des Pèlerins, cooking starts from a simple principle: the best ingredient is the one that comes from nearby. At lunch and dinner alike, the dishes are simple and generous, shaped by the seasons, what's available, and the producers of the valley.
The cheeses come from La Prairia, a family fromagerie established in Saint-Martin-Vésubie. Cows, goats, sheep — raised on the pastures of the Mercantour, transformed daily at the Roure farm. Over 25 years of know-how, which can be tasted in every meal.

In the evening, the table is shared. In the spirit of the alpine pastures, dinner is a convivial affair built around fresh, local produce, simply prepared to let the ingredients shine.
It begins with a welcome drink and socca niçoise, before a meal where each dish tells a little story about the territory.

We welcome walkers at lunchtime without reservation, subject to availability.
